    Antheraxanthin

Antheraxanthin is a yellowish carotenoid pigment found in plants, macroalgae and microalgae. Structurally, it is (3R,3?S,5?R,6?S)-5?,6?-Dihydro-5?,6?-epoxy-bets, beta-carotene-3,3?-diol or a xanthophyll with a terminal epoxy structure.

In plants, violaxanthin, antheraxanthin, and zeaxanthin constitute xanthophyll cycle pigments that are majorly involved in the photoprotection of plants. Hence, the antheraxanthin content of a plant is related to its degree of solar exposure.

Antheraxanthin and related compounds are plentiful in fruits. These are the antioxidants molecules that could provide oxidative stress protection via inhibition of lipid peroxidation.
